The only information we know about bacteria is mostly bad ones. Scaling 1 out of 10, 8 is the probability of negative opinions. We never look the other side of coin. Granted bacteria are dangerous yet there are types of bacteria that are beneficial to us. On your tables filled of food like artichokes, cheese, milk, kimchi, onions, yogurt or bananas are healthy foods contain excellent bacteria. What are these excellent bacteria? These bacteria are called probiotics. Probiotics are living microorganisms that have live mainly in the intestinal system and help prevent and treat some illness. It promotes digestive tract and healthy immune system. It normally consumed in fermented foods with active live cultures such as wine and yogurt. It plays an important role in regulating digestive functions by balancing intestinal microflora.
Our body is filled of good and bad bacteria. Both needed to be balance to have a good health. These good bacteria help to keep our gut healthy. As researchers trying to figure how probiotics work, they found a certain discovery the miraculous work of probiotics to improve our health. Probiotics helps to drop weight, anxiety, blood sugar level, irritable bowel syndrome, brain function, infection, assist indigestion and oral concerns. The most common probiotics today are Lactobacillus and Bifidobacterium. Lactubacillus can be found in fermented foods while Bifidobacterium is in dairy products. Lactobacillus is a beneficial bacterium that is acid resistant and tolerates bile effectively. It produces lactase which the enzyme breaks down the sugar in milk and reduces overgrowth of pathogens in digestive tract.. It also increases immune response against invaders and treats respiratory infections such as sinusitis and bronchitis.
So what are these fermented foods? How good bacteria work with them? Fermented products like wine and beer are traditional beverages formed through fermentation. Fermented foods are processed foods through lactofermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid. It preserves the food and creates beneficial enzyme like vitamin b, Omega-3 fatty acids and many more probiotics. The natural process of food preserves the nutrients and break down to more digestible form. This is the link to good digestion. But if you observe, the natural process of fermented food became obsolete because of modern technology and food preparation. However, bacteria transform the sugars and proteins in raw ingredients like fruits and grains into new flavors. They are the reason why an aged cheese tastes more delicious than milk and a beer taste better. They break the molecules into tiny particles to create amino acids, fatty acids and sugars that we can taste and smell the food. That is why our brain can respond to the sensory characteristics of these foods.
