So what are these fermented foods? How good bacteria work with them? Fermented products like wine and beer are traditional beverages formed through fermentation. Fermented foods are processed foods through lactofermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid. It preserves the food and creates beneficial enzyme like vitamin b, Omega-3 fatty acids and many more probiotics. The natural process of food preserves the nutrients and break down to more digestible form. This is the link to good digestion. But if you observe, the natural process of fermented food became obsolete because of modern technology and food preparation. However, bacteria transform the sugars and proteins in raw ingredients like fruits and grains into new flavors. They are the reason why an aged cheese tastes more delicious than milk and a beer taste better.
